Un Taco Mas: “We are still here”

Hello Duluthians, I am Rosalinda, owner of Un Taco Mas — the taco trailer mentioned in a PDD post last month. We would like to say thank you to all who came out and tried our food. We would like to apologize for it taking longer to re-open than we expected. We ran into some financial problems and we are working hard to get it up and running again. We will have a bigger menu, so please keep your eyes open and look for us. Again we thank you for your support and look forward to serving you again!

One of my journalism students wrote a story about Rosalinda and her truck that  was published on LakeVoice News.

Makes me very excited for it to open again.

Good to hear Rosie.  I was getting worried when I didn't see your trailer up there last week.  I hope you're open soon.  I've been bragging you up ever since I stopped by there the last two days before you were open.  If you remember I was the first person who asked you for lengua.  I think you were as surprised that I asked for it as I was that you had it.  I came back the next day and had the menudo.  Best I've had since I left Texas 25 years ago. It's about time Duluth has some authentic Mexican food. Your Babacoa is excellent as well.  I'm hoping that when you open up and have a bigger menu you will have some ceviche de pulpo and other such yummy stuff. Thanks again for bringing this food to Duluth.

Excellent. If I could offer a suggestion, it would help your business to start a Facebook page that had the details of when and where you are open.  It is a common practice among food trucks nationwide, and can really build up the business.  

A Facebook page is also free advertising which lets people find where you are and when you are open more easily. Some businesses update the page often with new menu items and new locations and hours, but updating when a major change occurs is helpful.

This is exciting news!

I used to work in South Minneapolis and often bought lunch from a woman who ran a quasi-taco truck from the back of a minivan.  Every day the scent of what she had cooked would draw me over, I'd pay a few dollars for a delicious taco that usually consisted of some preparation of steak, and go back to work happy.

I was in Minneapolis recently and what they're doing there is letting the food trucks park on Marquette, downtown. So people can just walk up and down the street, checking out the menus and then stand in line at whichever truck they want to patronize.  Do you think that would work in Duluth, Rosalinda? I know there are a few food trucks out there, but it seems pretty sporadic. And do you intend to stay up at the parking lot at Wrazidlio's, or are you hoping to get downtown?

The latest update from Rosie:

It has been a very slow process and we are trying to get it going as soon as possible, but reallisticly speaking it's probably not going to happen until January or February at the latest. Though we will not stop working on this until we get our permit, several people have suggested that we be cooks for hire. Please let us know what you think. We look foward to your feedback. Again thanks for all your support. Regardless of whether or not we decide to become cooks for hire our main goal will still be to get our trailer going again ASAP.
