I love everything about this article. 

 This prompted a wonderful memory that I haven't thought of in years:   Years ago we were in Hong Kong, and we walked through these absolutely amazing outdoor food markets, filled with such exotic items (including, to my delight, a Fat Albert T-shirt that is in my closet somewhere).  I wonder if the old Asian market in Duluth carried any of these Chinese dainties (somebody please reopen the market!).  I would definitely put dry salted cabbage in our stir fry.

I had to look up Praying Sticks, which I guess is Incense. I thought maybe it was another term for chopsticks for some reason.
