Farmers John and Emily Beaton have a set of principles that include the following ideas:
- We are all connected.
- If we respect the earth (soil, plants, and all living beings), the earth will support us.
- Our health and happiness depends on what we consume (or don’t consume).
- Food should not be mere sustenance–food should be nourishing and beautiful and should taste good, too.
- Food should be cooked with butter and love and enjoyed–slowly–with friends and family.
- Flowers are always a good idea.
Northern Roots 2: Revitalizing Local Food in the Western Lake Superior Region
This video is one of five segments created by students in the ethnobotany course taught in the fall of 2019 by Dr. David Syring at the University of Minnesota Duluth.
